Ingredients:

  • 2 large eggs
  • 4 teaspoons coconut flour
  • 1/8 teaspoon baking soda
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon garlic powder (snack option)
  • 1/8 teaspoon cayenne pepper (snack option)

Prepare

Mix well, pour in to 2 greased ramekins’, bake at 400 degrees for 10-12 minutes. Cut in half and top with full fat cream cheese, ghee or butter. Makes 2 muffins.

To make snack option, cut muffins in half, then in strips, and fry in 1 tablespoons coconut oil until edges are crispy. Cut into pieces and enjoy with homemade ranch dipping sauce.

Gourmet Paleo Muffins:

Line greased ramekin’ with a slice of pancetta, pour in egg mixture, top with 1 tablespoon of goat cheese (garlic-herb is yummy), sprinkle with chives or parsley and bake 15 minutes.
